Karina Knight, MBA, MS, RD
Karina is an internationally recognized nutrition expert with more than 10 years of experience. She is acclaimed as a trusted voice in the health and nutrition industry as a media representative.
She is a registered dietitian who enjoys working with her patients and strives on guiding them on implementing a healthy lifestyle. She attended Florida International University where she earned a Master’s Degree in Dietetics and Nutrition. She also completed a Master’s. Degree in Business and Administration from the University of Pittsburgh while working at the University’s department of Internal Medicine focusing on diabetes and weight-management. She later specialized in digestive health conditions including: IBS, celiac disease, inflammatory bowel disease, and small intestinal bacterial overgrowth (SIBO) as the head clinical and research dietitian at the Crohn’s and Colitis Center at the University of Miami. Throughout her career, she has counseled patients on a wide variety of issues, including heart health, prenatal and postnatal nutrition, and sports nutrition.
In the academic environment, she regularly taught nutrition courses to medical and PhD students at the University of Miami. Has authored and co-authored numerous peer-reviewed publications.
Karina is an active member of the Northern California Chapter Medical Advisory Committee for the Crohn’s and Colitis Foundation. She has participated with this organization for many years as s key note speaker at IBD Education Seminars and furnished logistical support for fundraising events. She is an active contributor to the nutrition community as the Social Media Coordinator as well as the Member Benefits Cooordinator for the California Academy of Nutrition and Dietetics.
Her goal: Help people live a healthy life with a realistic and simplistic approach to nutrition. She believes nutrition should be simple, wholesome and delicious.
