Yields: 4 servings (32 oz total)
1 C vegetable broth
4 C organic frozen cauliflower florets
1 garlic clove
1 C unsweetened almond milk
4 Tbsp nutritional yeast
Juice of 1 lemon
Salt and pepper to taste
- Boil vegetable broth and add cauliflower and garlic, stir gently and cover. Reduce heat to simmer, cook 5-7 minutes or until tender.
- Transfer to a food processor and add the remaining ingredients. Blend well until smooth and creamy.
- Add salt and pepper to taste.
OPTIONAL: you can replace nutritional yeast with Parmesan cheese for a non-vegan version. You can also replace vegetable broth with chicken bone broth to increase protein content.
