Ingredients:
2 ¼ C blanched almond flour
½ C unsweetened cocoa powder
½ tsp sea salt
1 tsp baking soda
4 eggs
¼ C coconut oil
½ C + 2 Tbsp. maple syrup
1 ½ C zucchini, grated (I used food processor)
½ C unsweetened applesauce (optional if you want to make it moister)
Instructions:
- Pre-heat oven to 350°F and grease a loaf pan.
- Combine dry ingredients followed by the eggs, coconut oil, maple syrup and zucchini.
- Bake for 45-50 minutes.
