Yields:  6 servings (3 fritters per serving)


5 cans of solid white Albacore tuna in water, rinsed and drained

1 zucchini, grated and squeeze out the liquid

½ C grated carrots

1 potato

1 Tbsp chopped green onions

¼ C oat flour

1 flax egg (1 Tbsp ground flax + 3 Tbsp of water, whisk together, set for 15 mins) or 1 regular egg, beaten

1 tsp smoked paprika

2 tsp Cajun seasoning

salt to taste

Avocado oil, spray


  1. Pre-heat oven at 375°F and spray cooking pan with cooking oil.
  2. Peel and chop potato, place on glass microwavable covered container and cook for 5 minutes. Remove and let cool.
  3. Combine with the remaining ingredients until well integrated and form about 18 fritters.
  4. Place on baking sheet, spray avocado oil over each fritter and bake for 15 minutes.
