Yields: 6 servings (3 fritters per serving)
5 cans of solid white Albacore tuna in water, rinsed and drained
1 zucchini, grated and squeeze out the liquid
½ C grated carrots
1 Tbsp chopped green onions
¼ C oat flour
1 flax egg (1 Tbsp ground flax + 3 Tbsp of water, whisk together, set for 15 mins) or 1 regular egg, beaten
1 tsp smoked paprika
2 tsp Cajun seasoning
salt to taste
Avocado oil, spray
- Pre-heat oven at 375°F and spray cooking pan with cooking oil.
- Peel and chop potato, place on glass microwavable covered container and cook for 5 minutes. Remove and let cool.
- Combine with the remaining ingredients until well integrated and form about 18 fritters.
- Place on baking sheet, spray avocado oil over each fritter and bake for 15 minutes.
