Yields: 8 servings


2 Tbsp. avocado oil

½ onion, chopped

1 garlic clove, minced

1 lb. ground turkey breast

2 bell peppers, diced

½ C carrots, chopped

2 Tbsp. ground cumin

2 Tbsp. chili powder

1 tsp salt

2 cans of petite diced tomatoes, low sodium

1 C pre-cut green beans, from frozen

½ C yellow corn, from frozen

1 ½ C cooked black beans

1 C cooked navy beans

2 C of chicken or veggie stock



  1. Heat oil in a large pot over medium-heat. Add onion and sauté until soften or for about 3 minutes, then add the garlic and sauté for one more minute. Add the turkey and spices, cook until brown.
  2. Incorporate the remaining ingredients and bring to a soft boil. Bring the heat down to a simmer, cover and cook for 30 minutes stirring occasionally.
